grasshopper chocolate mint cookies.


i made these yummies for st. patrick's day and they were perfect.  they are like little bits of heaven.  and the fact that they are made with a cake mix makes them even better in my eyes
because they are so easy to put together!  

cookie:

1 devil's food cake mix
1/2 cup oil
2 eggs

mix cake mix, oil and eggs together.  drop spoonfuls of dough onto a baking sheet.  bake at 350 degrees for 6-9 minutes {do not overcook!}.  let cookies cool completely.

peppermint frosting:

1/2 cup butter, softened
2 tablespoons milk
2 cups powdered sugar
1 1/2 teaspoons peppermint extract
green food coloring {7-8 drops}

cream butter and add powdered sugar, milk, peppermint, and food coloring and mix until blended.  add more powdered sugar if needed to reach the consistency you like.  spread on the top of each cooled cookie.

chocolate ganache:

1 1/2 cup semi-sweet chocolate chips
1/2 cup butter

melt chocolate chips and butter together in the microwave at 30 second intervals and stir after each interval.  spread melted chocolate on each cookie using the back of a spoon.

Those look so yummy! Have you ever had Cutlers cookies? They have some like this, they are AMAZING! Makes me drool just thinking about them.

Do you melt your chocolate at less than 100% power in the microwave? These look so delicious.

stacie, i just did it at normal power. as long as you do it in short intervals it shouldn't burn!
