cadbury mini egg cookies.

these cookies are hella good.  i made a different, much flatter version last spring {see here}, but i like this version a little better.  cadbury mini eggs + cookies = easter magic!!!

ingredients:

2 cups + 2 tablespoons all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 sticks {12 tablespoons} butter, softened
1 cup brown sugar
1/2 cup sugar
1 egg + 1 egg yolk, room temperature
1 1/2 teaspoon vanilla extract
1 bag cadbury mini eggs, broken into pieces

directions:

preheat oven to 325 degrees.  mix the flour, baking soda, and salt in a bowl and set aside.  in another bowl mix the butter and sugars together until they are combined and fluffy.  add the egg, egg yolk, and vanilla and stir until just mixed.  gradually add the flour and mix until dough forms - it will be crumbly at first, but it will come together.  fold in the cadbury mini eggs.  leave out a handful of eggs and top each cookie with some colorful pieces before baking.

bake for 9-12 minutes until the edges are slightly brown.  let cool and then munch munch munch with a big glass of milk.

AHHHHHHHHHHHHHHHHHHH I just made the cadburry egg blondies and they were the freakin bomb! I cant make these cookies becuase they wont last longer than 5 minutes.
